Understanding Slush Machine Brix Levels for Perfect Frozen Drinks
Getting the Brix level right is the key to perfect slush consistency. Brix (°Bx) measures the sugar content of the liquid mix, and it directly affects how your slush machine performs.
Optimal Brix range: 12-14°Bx
What happens at different levels:
- Below 10°Bx: Mix freezes too hard, may damage the machine
- 10-12°Bx: Slightly icy but workable
- 12-14°Bx: Perfect slush consistency
- 14-16°Bx: Slush may be too soft
- Above 16°Bx: May not freeze properly
Use a refractometer to check Brix levels. Adjust with simple syrup to increase or water to decrease. Most commercial syrups are pre-formulated for the correct Brix range.
